Paleo Chocolate Energy Balls

These Paleo Chocolate Energy Balls got me though a lot.

I created these energy balls for me to snack on during my hospital stay. I knew I was getting induced and that it could be a long time before I actually had my baby. So I wanted a homemade, healthy snack that would keep me full and give me energy.

And oh boy did I ever need these! I ate them mostly in the mornings with breakfast. The hospital food was better than I thought it would be, but it was all pretty low in fat and didn’t keep me full for very long (not to mention help dilate my cervix to 10cm and push out an eight pound baby, sheesh!).

These energy balls were a welcome treat and a little taste of home in a situation that felt so foreign and intimidating.

They’re full of real food, protein, and healthy fats – and taste pretty darn good too.

Ingredients:

  • 1 cup pitted dates

  • 1/3 cup hemp seeds

  • 1/3 cup peanut butter (or any nut/seed butter of your choice)

  • 1/3 cup coconut butter

  • 1 Tbsp cacao powder

  • Coconut flakes, more hemp seeds, or chopped nuts for rolling

Instructions:

  • In a food processor, combine dates and hemp seeds until dates are in small chunks.

  • Transfer date and hemp seed mixture to a bowl and add peanut butter, coconut butter, cacao powder, and collagen.

  • Mix until thoroughly combined.

  • Refrigerate mixture for about 5-10 minutes, then form into 1 inch balls.

  • Roll balls in your topping of choice and store back in the refrigerator (or just eat them all immediately because they’re that good!).
