Gut Healing Chicken Noodle Soup

Ok, so we all know chicken noodle soup is good for the soul (are those books still a thing?), but this chicken noodle soup is gut healing and good for your physical health too!

It’s a super simple recipe, with a touch of gut healing goodness from the fresh ginger and turmeric.

Both ginger and turmeric are superstars when it comes to reducing inflammation and healing the gut lining.

  • 1 Tbsp avocado oil

  • 1 leek, chopped

  • 3 cloves garlic, diced

  • 1 tsp grated fresh ginger (or 1/2 tsp powdered ginger)

  • 1/2 tsp turmeric

  • 1/2 tsp salt

  • 4 stalks celery, chopped

  • 4 large carrots, chopped

  • 1/2 cup mushrooms, sliced

  • 4 cups chicken broth

  • 2 cups filtered water

  • 1.5 cups cooked chicken, shredded

  • 2 cups pasta (use Jovial Cassava Pasta or cauliflower rice for AIP, or opt for chickpea pasta for more protein, or rice would work well too)


  1. Add avocado oil to a large pot over medium heat, and once hot add leeks, garlic, and ginger. Saute until fragrant.

  2. Add celery, carrots, turmeric, salt, broth, and water and bring to a boil.

  3. Once boiling, reduce heat to medium-low, cover and let simmer for 10 minutes or until vegetables are soft.

  4. While soup is cooking, cook pasta (or pasta substitute) according to package instructions.

  5. Remove lid from the soup, add shredded chicken and mushrooms and cook on medium heat for 5 minutes.

  6. Add cooked pasta to the soup and serve.
