Gut Healing Chicken Noodle Soup

Ingredients

  • 1 Tbsp avocado oil

  • 1 leek, chopped

  • 3 cloves garlic, diced

  • 1 tsp grated fresh ginger (or 1/2 tsp powdered ginger)

  • 1/2 tsp turmeric

  • 1/2 tsp salt

  • 4 stalks celery, chopped

  • 4 large carrots, chopped

  • 1/2 cup mushrooms, sliced

  • 4 cups chicken broth

  • 2 cups filtered water

  • 1.5 cups cooked chicken, shredded

  • 2 cups pasta (use Jovial Cassava Pasta or cauliflower rice for AIP, or opt for chickpea pasta for more protein, or rice would work well too)

Instructions

  1. Add avocado oil to a large pot over medium heat, and once hot add leeks, garlic, and ginger. Saute until fragrant.

  2. Add celery, carrots, turmeric, salt, broth, and water and bring to a boil.

  3. Once boiling, reduce heat to medium-low, cover and let simmer for 10 minutes or until vegetables are soft.

  4. While soup is cooking, cook pasta (or pasta substitute) according to package instructions.

  5. Remove lid from the soup, add shredded chicken and mushrooms and cook on medium heat for 5 minutes.

  6. Add cooked pasta to the soup and serve.
